Ingredients

  • 1 cup flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/8 teaspoon salt
  • 1 cup soy milk
  • 2 tablespoons vegetable oil

Method

Combine the flour, sugar, baking powder and salt in a large bowl until well mixed. Mix in the soy milk and oil and beat together until batter is smooth. Drop 1/4 cup of batter at a time onto a hot oiled griddle, or well greased frying pan over medium high heat. When bubbles appear on the surface of the pancake, approximately three minutes, flip, and cook the other side for another two minutes. Enjoy!

Ingredients

  • 1/2 cup oil
  • 1/2 cup soy yoghurt
  • 1 cup coconut
  • 3 cups crushed fruit
  • 2 to 2 & 1/2 cups flour
  • 2 cups rolled oats
  • 1 cup chopped
  • walnuts
  • 1 cup sultanas
  • 1 teaspoon vanilla

Method

Mix all ingredients in a bowl. Spoon into in a flat metal tray or loaf tin. Bake at 180c for 40 to 45 minutes. Cut into slices for a delicious and healthy alternative to sweet biscuits at your morning tea break. Recipe from Sue Belfitt “Vegan cakes” cook


Jenny's Chocolate CakeJenny’s Chocolate Cake

Ingredients

  • 125 gm vegan margarine
  • 3/4 cup castor sugar
  • 1 tspn vanilla
  • 1/2 cup silken tofu
  • 1 3/4 cups self raising flour
  • 1/4 cup cornflour
  • 1/2 cup cocoa powder
  • 3/4 cup soy milk

Method

Cream margarine, sugar and vanilla in a bowl. Break up tofu with a fork and blend this into mixture. Sift dry ingredients. Slowly add dry ingredients to mixture, alternating with milk, and mix well. Pour into loaf or sandwich tin, and bake in a moderate oven for 50 minutes, or until cooked.
